Ingredients (Part 2)

For Cooking the Rice: – 2 cups Basmati rice – Spices: bay leaf, cloves, green cardamom pods – Salt

Ingredients (Part 3)

For Preparing the Biryani Gravy: – Onions, tomatoes, green chilies – Fresh coriander and mint leaves – Spices: cumin seeds, red chili powder, turmeric powder, garam masala – Vegetable oil

Ingredients (Part 3)

For Layering and Garnish: – Saffron strands soaked in warm milk (for color) – Ghee (clarified butter)

Marinating the Chicken

Start by marinating the chicken with yogurt, spices, and a touch of oil. Let it sit for at least 30 minutes, allowing the flavors to meld.

Cooking the Rice

Rinse and soak Basmati rice. Parboil it with aromatic spices until it's 70% cooked. Drain and set aside.

Preparing the Biryani Gravy

Sauté onions until golden, add spices, ginger-garlic paste, and tomatoes. Cook until the oil separates. Then, add marinated chicken, mint, and coriander leaves.

Layering and Dum Cooking

Layer partially cooked rice and chicken gravy in a pan. Drizzle saffron-infused milk and ghee. Cover and cook on a low flame for 20-25 minutes, letting the flavors meld.
